It’s getting warmer and sunnier out, and you know what that means… Spring is here on Hilton Head Island! We are loving spending more time outside (though we could do with a little less pollen) and are gearing up for one of the most anticipated weeks of the year. The 51st Annual RBC Heritage Golf Tournament is taking place at Harbour Town Golf Links from April 15-21. Spectators will flock to Sea Pines to enjoy a week filled with golf, delicious food, and great company. The Sheri Nixon Team will most definitely be in attendance – be sure to let us know if you’re going so we can say hello. And keep your eyes on the video board – you just may see some familiar faces!

14.5ounce candiced tomatoes(or 2 large tomatoes, diced)
1/2teaspoondried oregano leaves
pinch of red pepper flakes
1/4teaspoonfreshly ground black pepper
2 1/2Tablespoonstomato paste
1/4cupfreshly grated parmesan cheese
1/4poundfarfalle pasta(or penne)
1 1/2heaping cupsfresh spinach leaves
Cook the pasta according to package instructions. Drain and set aside.
Add olive oil, minced garlic and diced onion to a large skillet over medium-low heat.
Cook for a few minutes, until softened and transparent.
Add tomatoes, oregano, basil, red pepper flakes, salt, and pepper to the skillet and stir to combine.
Add the tomato paste and water and stir well.
Turn the heat down to low. Cut the cream cheese into a few pieces and add them to the skillet, whisking them into the sauce until melted.
Add the Parmesan and whisk until melted in.
Add the fresh spinach and gently stir it into the sauce until it has wilted.
Add the pasta and stir until well coated in the sauce. Serve warm.
